Opening Report: Onefold Brings Breakfast, Bone Broth, and More

By Ashley Hughes, Denver Eater ONefold The abbreviated menu makes use of organic and locally sourced ingredients. Where a Quiznos once stood at 1420 East 18th Avenue is now a quaint, quick-service cafe ideal for a morning pick-me-up. Whether you're seeking a bite to eat, coffee, or tea, Onefold serves a well-edited board of from-scratch items in its homey space. Dishes take cues from the a.m. favorites of several cultures: A breakfast burrito wrapped in a homemade flour tortilla is a hometown nod, crepes topped with Bonnie Brae ice cream represent France, and the rice porridge congee is an Asian staple. Utilizing ingredients like Tender Belly bacon, other dishes include bacon fried rice, a simple breakfast, and Spanish tortilla. Craft coffee anchors the beverage selection, with beans supplied by Denver roaster Commonwealth Coffee, and a choice between the drip or pour-over methods. Organic loose-leaf white, green, and black tea is sourced from Boulder's Tea Spot, while the bone broth trend plays out here through an in-house version made with grass-fed beef, chicken, onion, ginger, and star anise—available in two different sizes. Onefold is open Monday through Friday from 6 a.m. to 2 p.m., and Saturday and Sunday from 8 a.m. to 2 p.m.
